Quick Breakfast Options
When fun loving Dad would get frustrated, ticked off Dad showed up, "Lar you better have your feet on the floor when I come back in here!’ I waited till I could hear him coming down the hall, then as the obedient child that I was,would throw my feet flat on the ground while still laying my upper half on the bed.
Fast forward a few decades... Well, now I have coffee and as long as I can have a few sips before talking to anyone I can keep ‘morning monster’ at bay. Although, Smokin Hot Hubby may want to dispute that statement ;)
So needless to say as a non-morning person big family breakfasts are not the norm in our home. That's why I try to make easy, healthy, quick breakfast options. Here are a few of my family’s favorites.
This breakfast has good fats, protein, and is packed with flavor! This is so easy and takes less than 5 minutes to make.
- Heat your skillet on medium heat and spray it with cooking spray.
- Add your egg then just as the white is starting to set break the yoke and ‘spread’ it around.Like pictured.
- Salt and papper to taste
- Flip egg and cook for another minute or two (I actually turn off my stove when its been about 30 seconds)
- While the egg is cooking toast up your bread (Ezekiel sprouted bread is a great choice)
- Take a 1/4 of a ripe avocado and spread it like butter on the bread
- Add the egg on top of the toast
- Sprinkle some siracha on top of the egg. (this is optional but SO GOOD).
The pineapple and coconut flavor give this such a tropical taste! It makes me want to be on the beach, relaxing. If you have a blender this works well but to make this even easier a nutria bullet or magic bullet is great for quick clean up.
In your blender (or bullet) add:
- 1/2 cup each frozen pineapple and blueberries (mango is good too)
- 1T of coconut oil
- 1 scoop of whey protein (optional)
- 2 handfuls of spinach
- 1 cup Coconut water (want to add more pineapple flavor? Use the pineapple flavored coconut water )
- Blend well
- Pour into a glass and top with Hemp seeds or chia seeds for some extra superfood nutrition
Although I usually make this with Southwestern Egg Beaters you could easily make it with an egg cooked like the one in the recipe above. I ran out of the Egg Beaters so I made it with the egg. So easy…so yummy!
- In a skillet over medium heat cook thin slices of deli ham till heated through
- Toast an english muffin (try for a high fiber one to make this an even healthier choice)
- Lightly butter muffin and add ham
- Then pour 1/4 c Southwestern EggBeaters with salt and pepper to taste. cook till done
- Place on top of ham and enjoy your breakfast sandwich ***Side note: To kick this up a notch substitute prosciutto for the ham!
