This recipe is from my mom, Jan Bloom. She loved making it and it is probably my favorite of all her recipes. Mom passed away this past Janurary. Jan -A-Lou’s Carrot Cake
- 2c Flour
- 2tsp Baking Powder
- 1 T Cinnamon
- 1 1/2 tsp Baking Soda
- 1 tsp Salt
- 1 1/2 c Vegetable Oil
- 2c Sugar
- 4 Eggs (large)
- 1c Crushed Pineapple (in Juice)
- 3c Grated Raw Carrots
- 1 1/2c Chopped Walnuts (optional)
Combine Sugar and Eggs with a mixer.
Slowly add the Oil and mix well.
Add sifted dry ingredients till well combined.
Stir in carrots, pineapple, and nuts.
Bake in a greased 13x9 pan for 50-55 mins @ 350.
Remove from oven when a knife or toothpick comes out of the middle clean!
COOL and ICE!!
CREAM CHEESE FROSTING:
Combine:
- 1 Box Powdered Sugar
- 1 c of softened Butter
Add:
- 1 8oz package of Cream Cheese
- 1 tsp Pure Vanilla Extract
- 1/4 tsp Salt
Beat until FLUFFY. Spread over cake (should be light and fluffy, NOT thick)
