Baba’s Banana Pancakes




This is my take on the recipe going around the internet. The original recipe is just 2 ingredients…banana and eggs. And although it is a pretty good recipe, I wanted to make these more like a pancake and less like a crepe.  My goal was to make it my grandson’s (aka Little Buddy) favorite pancake. And he really loves it!! Its super easy, healthy and because my oldest has to eat gluten free...it's gluten free!

Baba's Banana Pancakes

  • On a plate mash 3-4 very ripe bananas with a fork then set aside
  • In a mixing bowl crack 1 egg for every banana plus an extra egg at the end (for example 4 bananas used...crack 5 eggs in the bowl)
  • Whisk the eggs well 
  • To the eggs add a tsp of vanilla extract and 2  tsp cinnamon (optional)
  • Add the bananas, mix well (I actually like to mix with a mixer instead of a hand whisk for extra fluffiness)
  • Next, add 1 heaping T of gluten free flour for each banana. Pictured is what I get from Costco (brand is Namaste Foods) and it works really well. If you don’t have or want gluten-free flour just add self rising flour.


  • Your batter should be close to the same consistency as regular pancake batter. As shown above. Cook on the griddle with cooking spray or with, my favorite option, coconut oil. 
  • Let the pancake cook long enough on the first side. You will know its time to flip when the edges are starting to brown and the pancake looks like this: 

  • This should make about 10-12 pancakes depending on the size you want and about 20 if its silver dollar pancakes.
Now here is the fun part…THE TOPPINGS!!! Here are some options we love:

  • Powdered sugar and a sprinkle of cinnamon 
  • Peanut butter with maple syrup (or either on its own)
  • Nutella (whoo doggie!! So good! Did I just write whoo doggie? I may need more coffee) 
  • Or plain works too.
The possibilities are endless. Use your imagination.  You can also double this batch and the pancakes will keep for a couple days. This makes for a quick and delicious breakfast or snack for the kiddos this summer!
