Swiss Cheese Chicken Casserole




Summer break is here! So that means pool time, fireflies, ice cream, and less rushing around. Well, that last part may be a bit of a fantasy, but hey a girl can dream, right?  ;)
I used to think when our daughters were off for summer I would have SO much more time to devote to cooking dinner. Then something happened...it got hot! There was no way I was turning on the oven or slaving over a hot stove! (Wow, I just wrote that and in my head I said it in my Mom's voice LOL)

Unfortunately, Smokin and the girls had become accustomed to eating and sandwiches tend to get tiresome after a while. Enter the slow cooker/crockpot - an awesome little kitchen appliance that makes dinner and cooking so much easier.

I not sure where the original recipe is from; my best guess is a Campbell's soup label.   Over the 25 plus years I have been making this it has been tweaked several times to make it my own. Here is my version:
  
You will need:

4-5 boneless skinless chicken breast
4-5 slices of swiss cheese
2 tsp garlic powder
1 tsp Lawrys seasoning salt
1/2 c chicken broth
1 12oz can of chicken flavored stove top
2 small cans of cream of chicken soup
1/2 stick melted butter



  • Spray crockpot with cooking spray and pour 1/4 c of chicken broth on the bottom
  • add 4-5 chicken breasts 
  • season chicken with seasoning salt and garlic powder
  • place a slice of swiss cheese on each chicken breast
  • in a mixing bowl combine the stuffing, cream of chicken soup and the remaining chicken broth
  • add stuffing mixture to crockpot and spread evenly
  • melt butter and then drizzle over stuffing
    Cant stop...wont stop...love me some butter!
  • cook on high 4 hours or low for 6 
Here are a few side notes:


  1. If you don't have swiss cheese you can substitute with provolone.
  2. The sides will get really brown but don't fret - thats the yummiest part. We fight over who gets that part. ;)
Just steam up a bag of veggies in the microwave with this chicken and, voila, you have an awesome, delicious dinner without heating up your house.
