Chicken Green Chile Casserole
In my opinion, nothing is as comforting as a good chicken casserole. They are easy to prepare and you can in most cases, make it ahead of time. Having some casserole recipes in your recipe arsenal is just the thing to help a busy parent. With the kids going back to school and those school sports games going into full gear we need all the help we can get.
As I mentioned before, baking up a big batch of boneless skinless chicken breasts on the weekend helps SO MUCH. Especially if you want to make a few dishes that require cooked chicken during the week. Just bake, shred, and then separate the shredded chicken into freezer bags (about 2 cups in each bag). You now have chicken for your weekday dinners and a huge time saver during the week.
The casserole I want to share with you today is a hit every time I make it. It's not my own recipe and you can find variations all over the internet. I'm sure it will soon join your weeknight meal schedule. Here's how you make it...
You will need...
- 2c Shredded cooked chicken
- 1/2 of an onion, chopped
- 1c Sour cream
- 1 Large and 1 small can cream of chicken soup
- 2 Small cans of diced green chilies
- 2tsp Garlic powder
- 1tsp salt
- 1tsp pepper
- 12 Corn tortillas
- 3c Shredded pepper jack cheese
In a large bowl, mix the soup, onion, sour cream, garlic powder, salt, pepper, and green chilies.
Take a few spoonfuls of the soup mixture and spread in a 13x9 pan that has been sprayed with cooking spray.
Then add chicken to the soup mixture in the bowl. Mix together.
In the pan place 6 corn tortillas. They should over lap some to cover the whole bottom of pan.
Layer the 1/2 the soup/chicken mixture on top of tortillas
Then add half the cheese.
Repeat one more time. (Tortillas, soup mixture, cheese)
Bake in a 375 degree oven for 45-50 or until the casserole is bubbly on the sides and the cheese is golden brown.
Serve up with a nice salad or slices of tomatoes. Yum!!
