Easy Peasy Cinnamon Rolls
(part of the 2017 Summer Bucket List Kids Edition)



Nothing is better than a good cinnamon roll on a lazy, summer morning. What makes these even better is they are semi-homemade. The dough is a loaf of frozen bread dough. 
I put this on my grandson's Summer bucket list because he LOVES to cook with me. He drags over his "down", which is his step stool, and together we create yummy dishes. Cooking together creates not just amazing memories but also a special bond.  

This recipe is a combination of different ones I found on the internet. Its fun, easy, and budget friendly. I add butter to the icing to kick it up a notch. I also add LOTS of cinnamon.

Things you will need...

ROLLS

1 Loaf of Frozen White Bread
2/3 c    Granulated Sugar
2 T      Ground Cinnamon
5 T      Butter, melted
Flour for when rolling out dough
Ruler for even cutting


Look how much the frozen dough gets!
  • At bedtime the night before, take frozen loaf out of the freezer and place in a bowl that has been sprayed with cooking spray.
  • In the morning punch down the dough once 
  • Place on a floured surface and mold into a ball. (Doesn't need to be perfect)




  • Roll dough out to rectangle, about 8"x14"(Use a ruler to help measure)
  • In a small bowl with a fork mix the sugar and cinnamon together well.
  • Brush melted butter on the dough
  • Sprinkle ALL the sugar mixture evenly onto dough
  • Press sugar mixture down lightly with finger tips or back of spoon

     
  • Start rolling the dough - making sure to do it tightly
  • Pinch the seam on the roll, and using the ruler as your guide cut 1" for smaller and 2" inch for larger rolls. I prefer the 1 inch.

  • Place rolls in a 13x9 pan or on a cookie sheet 2" apart. Make sure pan/sheet is sprayed lightly with cooking spray and a light, sprinkling of flour.  Make sure to tap off any excess flour.
  • Cover and let it sit in a warm area and rise 1-2 hours.
  • Place in a 350 degree oven for 20-25 mins (smaller rolls) or 30-35 mins (larger rolls) until the rolls are golden on top and cooked through.
  • Set aside to cool slightly before adding icing (Recipe below)

ICING

1 cup     Powdered Sugar
1-2 tsp  Vanilla Extract
2 T        Butter, softened
4-6 T     Half and Half

  • In a small bowl add butter and vanilla. Mix well with a fork
  • Start to mix in powdered sugar 
  • Add Half and Half to desired consistency. Mine is on the thick side
  • Drizzle, with fork, over warm rolls.



These come out so delicious and are so fun to make. Give them a try some lazy summer morning. The hardest part is waiting for them to rise. 😃
