Fall Series Recipe Edition
Jalapeño Pepper Poppers


Nothing says Fall like football. I love to watch college football. Those kids really give it their heart and soul when playing.
So of course when there is football there are yummy (not so good for you) snacks that enhance the game even more. One of my favorite is Jalapeño Poppers. I had only bought the frozen poppers and never had homemade until we visited my friend Torri's home, some years back. She pulled the poppers out of the oven and we all pounced.  Wow, they were great!
Torri's recipe was my inspiration for this version of Jalapeño Poppers. Thanks girlfriend!

Here's what you'll need:
  • 12-- Jalapeño peppers, halved, seeded, and deveined (I recommend wearing gloves when prepping the peppers and make sure you wash your hands after handling the peppers.)
  • 1 12 oz. tub of whipped cream cheese, plain
  • 1 C--Shredded Sharp cheddar cheese
  • 1 C--Pepper Jack cheese, shredded (you can do 2 C cheddar if you want less heat/kick.)
  • 1 T--Garlic powder
  • 1/2 tsp--salt
  • 1/2 tsp--Pepper
  • 12 slices Precooked bacon, halved (I highly recommend the precook bacon from Costco, but any precooked bacon will do)
Preheat oven to 425

Cover a cookie sheet with aluminum foil and spray lightly with cooking spray



Place halved peppers on prepared cookie sheet



In a large bowl mix well the cream cheese, shredded cheese, garlic powder, salt, and pepper.

Then scoop out the mixture and pack into the halved peppers.


Wrap each pepper with the halved, precooked bacon. 


Cook at 425 for about 10-13 minutes. Checking every minute or so after the 10 minute mark to make sure they don't burn.
Smokin Hot Hubby's plate...Hope he has enough! ;)

Then enjoy!!

**sidenote~~ you can use regular bacon. Just cook the bacon halfway in a pan, wrap it around the peppers and cook at 450 about 20-25 minutes or until bacon is crisp. I prefer the precooked because its easier.

Fried chicken I've had many requests from friends and family for my fried chicken recipe.  On the rare occasions that we had left-overs, Smokin would bring some to work to share with his friends.  The guys would practically fight each other for some. The key to my fried chicken is bacon fat!! You don’t need a whole lot but you need enough to flavor the frying oil.  So as much as it may stink you’re going to have to cook up bacon to save the fat. Hot Dogs!!! Everyone loves a good hotdog and everyone has their favorite way of topping a hotdog. I am going to give you our family's top 3. There really isn't a 'wrong' way to top your hotdog. It's all by personal preference BUT if you are looking to mix things up a bit here are a few  alternatives. Also, I want to add that a good, quality hot dog is key to having great flavor! The Classic Chili Cheese dog kicked up a notch ... Being from Southern California we love a little heat in our foods. So take your grilled hot dog and... Place thinly sliced jalapeño and finely chopped onion on the dog  Top with your favorite chili (my homemade chili is a favorite but we ate it already so canned it is).  Instead of shredded cheddar try shredded pepper jack.   Place under broiler for a couple minutes till cheese has melted. Chicken Love Soup I love scooping the soup up with these chips! Is there anything better than a nice warm cup of soup?  I love soup on a cold winter day. Snuggled up on the couch, watching a good movie, and enjoying a delicious cup of soup is a bit of heaven of earth, in my opinion. Only thing that would make it more cozy is big fluffy snow flakes falling outside.   My foodie friend Robyn is the inspiration for this yummy warming soup.
