Tres Leches Cake





For the upcoming Cinco de Mayo celebration I thought I would share my favorite cake to bring to any type of get together. It’s refreshing yet rich... sweet but not OVERLY sweet... beyond delicious and easy to make. It is easy recipe but it has more than a  few steps.  But with focus and patience you’ll be sitting down and eating an amazing cake in no time. Maybe you’ll even share it with friends but I wouldn’t blame you if you didn’t; it’s that good!!

Here is what you will need....

Cake ingredients! (Milk is pictured in next image)

For the cake...
1 c Cake Flour
1 1/2 tsp Baking Powder
Pinch of Salt (about 1/4 tsp)
1 1/2 tsp Vanilla  
1 c Sugar (reserve 1/3 of this for the egg whites)
5 eggs , separated 
1/3 c Milk (Whole or low fat is fine.)




For Milk mixture...
1 can Evaporated milk
1 can Sweetened Condensed milk
1/3 c Heavy Cream




For Whipped Topping
1 pint Heavy Cream
1/4 c sugar

PART 1:

Preheat oven to 350 degrees.




In a bowl combine the cake flour, baking powder and salt. Set aside.



In a separate bowl mix together the 2/3 c sugar, egg yolks, vanilla, and milk until a nice pale yellow.




Add the dry ingredients to the batter. Gently stirring until combined. Set aside.





In yet another bowl 😉 whip up the egg whites to soft peaks. Add the rest of the sugar (1/3c) and mix to stiff peaks. Don’t over beat; you want you egg whites to be glossy, not dried out. 





Fold egg whites gently into the batter. 




Pour and even out the batter in to a greased 9’x13’ pan.

Put in the oven for about 25 minutes. Or when a toothpick is inserted into the center and comes out clean. 

Let the cake cool for 10 mins then flip over onto a platter (with sides) or whatever you plan on serving it in. I like to put mine in a Rubbermaid container because it has a lid for easy transport and keeps the cake fresh while refrigerated. 



Poke the cake all over with a fork. 

PART 2:





In a bowl, mix together the sweetened condensed milk, evaporated milk, and 1/3 c heavy whipping cream. 




Pour slowly over the poked cake. I like to pour a little then take the back of the spoon and spread it.  Repeat this till all the milk mixture is poured. Refrigerate for about 2 hours to soak up all that wonderful milk mixture. 

PART 3:



Whip 2 c heavy whipping cream with 1/4 c  sugar together until thick delicious awesomeness😍😍😍



“Frost” the cake with the whipped cream and garnish with the fruit of your choice. I love strawberries or raspberries.  Maraschino cherries are the traditional fruit garnish for this cake.
