Chicken with Sun-dried Tomatoes in a Bourbon Cream Sauce

An easy yet decadent recipe sure to make your family feel loved and happy.


It's that time of year when Louisville, Kentucky starts the 2 week Derby Celebration.  I know, I know a 2 week celebration for a 2 minute horse race? Well, it is the most exciting 2 minutes of the year in our humble opinion. Kentucky has been our home for over 17 years, and every year is just as exciting as the first one. 

Another thing that Kentucky is famous for, besides the Derby, is bourbon. So I thought it would be fun to share a recipe I created that includes a delicious bourbon cream sauce. (Although the bourbon is optional it takes this amazing sauce to the next level! Trust me! 😏)

I love to create in the kitchen. It helps me to unwind after a stressful day.  I never really liked to cook but a friend of mine told me some years back that, "Cooking was a labor of love. Just look at how happy your family is after you have cooked for them". That advice  changed my perspective. Now, I for the most part, enjoy whipping up food for my family. It's amazing how much a new thought can change your whole attitude.  



Here's what you'll need:


Broth and Bourbon not pictured


1T     Extra Virgin Olive Oil
2T     Butter
2tsp  Garlic powder
2tsp  Italian Seasonings
2       Shallots, finely diced
3/4c     Chicken or Vegetable Broth
1/2c  Heavy Whipping Cream
2/3c  Sun dried Tomatoes (packed in oil), chopped
3c     Baby Spinach, Roughly chopped
1.5lbs Chicken Breast, cubed
Salt and Pepper to taste
1-2 shots of good quality Bourbon (Optional)



Put the olive oil  and 1T of butter in a hot skillet and add the cubed chicken breasts. 
Season with the garlic powder, salt, and pepper.
Brown the chicken and remove the chicken from the skillet



Add the diced shallot and 1T butter to the skillet. Cook 2 minutes.
Deglaze the skillet with the bourbon (If you choose to not use the bourbon just use the broth to deglaze the skillet).



Add the broth and italian seasonings
Add the chicken back in the skillet 
Cover and simmer for 5 mins
Uncover and simmer another 5 mins



Add spinach and sundried tomatoes and simmer another 5 minutes till spinach has wilted



Add in the cream warm through
Taste to adjust salt and seasonings.



Add on top of pasta or rice.

Then enjoy!

This time I put ours on top of rice and serve with a salad.

It's a great dish for an eloquent night in just for two, or a delicious easy dinner for the whole family.
