Pierogi Casserole

This is my favorite brand and flavor.

Sometimes I get the urge to try something new with a food we eat a certain way. We love pierogies at our house. They are awesome baked for about 10 minutes and then put in a frying pan with a bit of cooking spray to brown them up. I love eating them with applesauce and sour cream on top. Try it, they're yummy.

But like it said I sometimes like to try a new twist on a food. Today, I decided to try making it into a casserole. It turned out really good.

First thing I did was lay frozen pierogis in a pan sprayed with cooking spray.

In a mixing bowl I mixed
1 can roasted garlic cream of mushroom soup
    1 c sour cream
    1/2 c vegetable broth

Spread mixture on to pierogies

I then added 2 c sliced Baby Bella mushrooms. (You can add as many as you like. Next time I will probably add more)

Sprinkle with
       2 tsp garlic powder
       1 tsp pepper
       Pinch of salt

Add 1-2 c shredded cheddar cheese
Bake covered @ 325 for 20 minutes
After 20 minutes remove cover and turn up oven to 350. Bake till cheese is melted and golden brown - about 10 minutes.

This turned out really delicious. Next time I will add shredded, cooked chicken with the soup mixture to bulk up the protein. My family ate it up and it is Grandson approved.

I served this with peas and we had a nice fruit salad for dessert - quick and easy!

Hope you try this recipe and let me know if there are any other posts you'd like me to write about. I want this to be a good lifestyle/recipe resource for you.

Make it a great weekend and make memories that you will forever cherish!
