Turkey Sausage Chili
I am of the belief that you can never have too many chili recipes on a cold day. Nothing warms you up like a great bowl of chili.
This recipe happened on an unexpected, extra-cold day; I had a HUGE craving for chili. I used the ingredients I had on hand and this was the result. Let me say this turned out way better than I anticipated. The flavors are out of this word and the ingredients are full of protein and fiber!
Here's what you need...
1.5 lbs lean ground turkey (93/7)
1 14 oz kielbasa, diced
1 medium Onion, diced
1 bell pepper (I prefer yellow or orange)
3 cloves chopped Garlic
3, 15 oz cans Dark or Light kidney beans, drained and rinsed
2, 15 oz cans fire-roasted diced tomatoes; don't drain
1 4 oz can diced green chili
Salt, to taste (I like using celery salt)
2 T Chili Powder
2 T Ground Cumin
2 T Ground Cumin
1 T Garlic powder
1 T Chipotle powder (less for less spicy)
In a large pot over medium high heat, add olive oil and the turkey. Break up the meat with a wooden spoon. Season well with salt (I used 2 tsp celery salt).

When the onion and bell pepper soften (about 5-6 mins) add chopped garlic and other spices. Lower heat to med/low.
Add beans, green chili, and tomatoes. Mix well.
Turn heat down to low and add vegetable broth.
Simmer for an hour or longer. Make sure and stir every so often. Also, the longer it simmers the more the flavors meld together!!
Garnish with whatever you'd like; green onion, sour cream, and shredded cheese!
