Blender Banana Bread
Meal prepping can be so overwhelming when you first start. I wish I could be one of those "it took me an hour to cook for a week" types of people. But then I realized I need not compare myself to them. They should be a health inspiration. My Type A personality doesn't have to meal prep prefect. I just need to focus on one good habit to meal prepping until I have a good idea what to do and then move on to the next habit.

There are so many youtube videos and websites that can inspire the meal prep needed to make you have a successful healthy week.
I thought I would share the Gluten Free Banana Bread by Mind Over Munch. (Link to original recipe is above) She has great videos and amazing content about eating healthy without breaking the bank. I like the gluten free aspect of this banana bread because my daughter was diagnosed with Hashimotos. Hashimotos is a thyroid disorder and a gluten free diet is often recommended to help keep it under control.
Here's my version of the Mind Over Munch Blender Banana Bread:
1. Preheat Oven to 375
2. Line a loaf pan with aluminum foil and spray with cooking spray
3. In a food processor (or blender) put in 3 VERY ripped bananas. The more brown spots they have, the sweeter the banana bread.
4. Then add to blender:
5. Blend well and pour in to the prepared loaf pan
6. Top with your choice...
She used pecans and oats, but I used sliced almonds. Next time, I may add a sprinkle of coconut
sugar as well.
7. Cook for 40 mins or until the toothpick comes out clean.
8. Let cool slightly before removing it from pan

- 2 tsp Cinnamon
- 2 lrg Eggs
- 1/4 c Maple Syrup
- 2.5 cups of Old Fashion Rolled Oats
- 1/4 tsp salt
5. Blend well and pour in to the prepared loaf pan
6. Top with your choice...

For extra protein and healthy fat spread some almond butter on it! Theses little packs are great for portion control and on the go! |
I cut this up into 8 slices and placed in individual snack size baggies. It is good for Stephanie and I to have it for 4 breakfasts each. It is so yummy and filling. Add a nice piece of fruit or a yogurt and you are set.

With my breast cancer diagnosis I am realizing more and more, through meeting with doctors and nutritionists, just how incredibly import good nutrition is. I know meal prep is a habit that takes time to learn. But I hope that taking it one step at a time will help us all to form better eating habits.
