This soup is so filling and delicious Potato Soup is my mother in law's favorite and she requests it often. This hearty soup really hits the spot on a blustery day and is so simple to make. I want to thank my friend, Mary, for sharing this soup recipe several years ago. Over the years I've tweaked it just a little bit but Mary gets the credit for the awesome recipe. Thanks Mary!
Here is what you need...
Spray a large pot with cooking spray
Add Broccoli slaw and cook 2-4 minutes.
Add garlic powder and red pepper flakes
Cover with broth (if broth doesn't cover add water to pot also)
Bring to rolling boil
Then reduce to simmer and cover the pot
Mash the soup in the pot (if you like a smoother soup use an immersion blender)
Then add cream and bacon stirring together
This is when you taste and add salt and pepper to taste (I like Lawrys seasoning salt)
Serve it up with some extra cheese on top.
This can also be made with extra Easter ham. Just dice the ham and cook up in place of bacon in 1-2 tablespoons of butter. If you like potato soups, this one will be a family favorite!
I encourage you to take this (or any) recipe and play with it. Use your imagination and let the creativity flow.

- 5 Pounds of potatoes, peeled and diced
- 1 Bag of broccoli slaw (I like to put in a bowl and snip it with scissors for smaller bits)
- 8-10 slices of bacon, diced
- 3-4 cups shredded cheddar cheese
- 1 diced medium onion
- 32 oz chicken broth or vegetable broth
- 1 T garlic powder
- 1/2 tsp Red Pepper flakes
- 1/2 cup heavy cream or sour cream
- Salt and Pepper to taste
