Chicken Burritos




I know I have said this before but it is worth mentioning again. Nothing helps make the weekday dinners go smoother than a little meal prep. The #1 tip is to bake a big pack of chicken. You can make casseroles, throw it shredded into salads, and the list goes on and on.
Today I am going to share the  recipe for the most delicious Chicken Burritos.  Literally takes less than 15 minutes to make and your family will love them. 

Here's what you need:

2-3 cups Cooked shredded Chicken Breast
2 T of Butter
1 T Garlic Powder
Cayenne Pepper (to taste)
Package of Flour Tortillas (you could use Corn if you wanted tacos instead)
1 15 oz can of Fat Free Refried Beans (we are going to add in our own fat)
4 Slices Bacon/Pancetta  ( you could also use Chorizo)

Toppings:
Sour Cream
Avocado
Cilantro
Salsa
Green Onion
Lime 
Shredded Cheese

To make...



  • In a pan over med heat add the bacon or chorizo. Cook till cooked through.



  • Add the can of refrained beans.



  • Mix well then reduce heat to low and let the beans heat through. Stirring periodically.




  • In a skillet melt your butter. over low-medium heat




  • Add shredded chicken with the garlic powder and cayenne pepper. (don't worry about it being too spicy. The cayenne pepper gives it flavor and just a kick of heat. I usually put in a tablespoon. But start with a teaspoon and try it from there.)



  • Let the chicken crisp up a bit. Stir it often to keep it coated evenly.



  • Prepare your toppings
  • Heat up your tortillas (you can put them on an oven safe plate in the oven at 170 degrees to warm or heat up on the range in a dry skillet.)
  • Put your burrito together and enjoy!!
This really makes a flavorful burrito and can even be used as a taco filling. Like I said don't be afraid to try the cayenne pepper. My grandson eats it and has no issues. The cayenne just gives it a little kick to enhance the flavor of the chicken and garlic.
