You’ll need… 2 lbs of diced butternut squash (Most Costcos carry 2lbs diced Butternut Squash) 1 T Curry Powder 1 1/2 tsp Ginger 1 1/2 tsp Cumin Salt and Pepper to taste 3-4 C Chicken Broth (you could also use vegetable broth) 2 Shallots, minced 1 T Extra Virgin Olive Oil 1 can 15oz Coconut Cream (not milk) Heavy whipping Cream(optional) In a large pot add the olive oil and shallot, sautee for 2-3 minutes or until softened Add the chopped Butternut Squash as will as the spices Mix well so the squash is cover evenly by the spices Pour Chicken Broth over the squash till covere
